I used a special ingredient!
If you’ve been reading my blog at all, I’m sure you could guess that I simply substituted the 1/3 cup of milk for 1/3 cup of vanilla hemp milk plus a tablespoon of water!
I’ve been purchasing hemp milk for a month or so now and have been wondering if it would be good for baking. The muffins were so tasty and moist that I’d have to say that this was a successful experiment.
Hemp milk has more of the consistency of whole fresh milk which is why we added the tablespoon of water. It has a nutty, almost mocha flavor…delish!!! I had only been using my Vanilla Hemp milk on my cereal & loving that also. Now I’ll have to try some other recipes.
Hemp milk naturally provides Omega 3 & 6 essential fatty acids…PLUS calcium, vitamin D, & riboflavin. Those nutrients are inherent & not synthetically added as is true with cow’s milk! I quit drinking cow’s milk a few years back when I became lactose intolerant & then ran across http://notmilk.com and read a few things there!
I’m certain that you’ll enjoy hemp milk too & I’ll be trying the other flavors too!
